Brown Rice & Vegetables (vegan-friendly)

There are a few things in this recipe that do not align with Ayurveda postpartum cooking - so if you are looking for an ayurveda recipe this may not be for you - BUT it's definitely a healthy and yummy meal.

  • 1-2 cups of brown rice

  • fresh leak (between 1/8th to 1/4th of a leak depending on how much you like leak)

  • 1 capsicum (bell pepper ) - the colour of your choice or 2 x 1/2 capsicums different colours

  • 1 whole brown onion OR you can use some frozen onion about 1/2-1cup 

  • 1/2 a broccoli OR you can use 1/4-1/2 bag of frozen broccoli

  • 1 can or corn kernals OR 1 cup of frozen corn kernals

  • * optional - 1 cup of frozen peas

  • *optional - 1/2 cauliflower OR 1/4-1/2 bag of frozen cauliflower

  • 4 carrots chopped into stirfy strips or tiny cupes OR 1-2 cups of frozen carrots

  • 500g fresh baby spinach leaves

  • Spring Onion roughly 4-6 not the whole bunch

  • 1 tsp garlic granules OR crush and chop up 2 cloves of garlic

  • 1-2 tsp dried parsley 

  • 1/2 tsp dried chives

  • 1/2 tsp dried onion

  • 1/2 tsp dried ground ginger

  • 1 tbs of sunflower oil

  • salt



1 – Chop the leak and spring onions into thin slices and place into a wok style fry pan with oil - add onion 


2-  Place remaining vegetables (wash & chop first if using fresh) into the wok style frying pan - if using fresh vegetables it is usually best to steam them first (excluding vegetables in step 1)


3- Once all ingredients are in the frypan set on a low-med temperature and sprinkle all spices/herbs over the veggies then flip the vegetables around regularly until they are soft but still retain a slight crunch (excluding the leak and onion which should both be soft and not chewy or crunchy). You can add more oil or spices/herbs as you go to satisfy your own individual tastes

4- Wash fresh spinach leaves and place them on/in the plates you intend to serve on


5- Once rice is cooked (should not be over-cooked or you will have stew which is not what you want for this meal) you can choose to either scoop it all into the wok frypan with the veggies to mix through - or you can scoop the rice directly onto the fresh spinach leaves on the plate then scoop your veggies out to serve on top of the rice for people to mix together as desired or eat as is. *optional garnish with spring onion and/or fresh parsley

NOTE: For preparing this meal you will need to have a deep saucepan, deep frypan or wok  and if using fresh vegetables for all veggies used in the meal rather than frozen you will need something to steam the vegetables first. This meal cannot be prepared in a slow cooker as it will become to soft and/or mushy which you don't want

This recipe usually does around 4-6 servings sometimes more depending on how much you eat
